Our Olive Oil. Pure, Nourishing, and Deeply Rooted

We are Dor and Ellen Farkash,  life partners, farmers, agronomists, and people of the land. Our journey led us to Pelion, Greece, after years of searching for the perfect place to grow olives and craft exceptional olive oil. Here, between mountain air and sea breeze, we found a landscape that honors both tradition and innovation; a place where we could create something meaningful.

Our mission is to strengthen the livelihood, dignity, and independence of local farmers. We believe in collaboration: working hand in hand with landowners and multigenerational growers, preserving knowledge passed down for decades while elevating the future of Pelion agriculture.

Precision, Quality, and Daily Care

From each grove we cultivate, we produce organic, early-harvest olive oil. Every day, we refine quality, monitor acidity, preserve flavor, and increase the natural antioxidant levels that define true excellence. For us, olive cultivation is far more than irrigation or harvesting – it is a relationship with the land. We work in harmony with nature, using only natural materials to enrich the soil. No chemicals. No shortcuts. Just respect and deep understanding of the tree and its ecosystem.

Our harvest is never determined by a fixed date. Instead, we listen to the trees: to the condition of the fruit, the energy of the grove, and the rhythm of the weather. When the moment is right, we harvest by hand and cold-press the olives within hours, never exceeding 20°C. This guarantees optimal quality, preserves delicate aromas, and maintains the vibrant taste and nutritional richness of early-harvest extra virgin olive oil.

A Limited Edition Grown for Mattarello

In a separate plot of ancient olive trees, we cultivate a special limited edition exclusively for Mattarello restaurant. This grove receives exceptional attention, guided by a custom protocol we developed through years of experience growing olives in northern Israel. Every step, from soil health to pruning, irrigation, and harvest, is designed to bring out the deepest expression of the tree and its terroir. The result is a small-batch oil crafted with intention, precision, and passion.

From Mill to Bottle. A Clean, Transparent Process

At our mill, managed according to strict EU food-production standards, oil extraction takes place within hours of harvest. We use no water during extraction and no plastic at any stage. The olive oil is stored in stainless steel containers or glass bottles to maintain purity, freshness, and complete integrity.

Every batch undergoes certified laboratory testing to ensure exceptionally low acidity, precise polyphenol levels, and compliance with international Extra Virgin Olive Oil (EVOO) standards. We value transparency. From the grove to the bottle, you know exactly what you’re receiving: pure, honest olive oil.

The Amfissis Olive – A Local Treasure

Our olive oil is produced exclusively from the traditional Amfissis variety, native to the Pelion region. Its characteristics make it truly special:
