All year long, we tend to each tree with precision, pruning, nurturing the soil, and keeping the grove in perfect balance. These small, careful steps prepare the trees for a healthy, abundant season.

Hand-Harvested at the Right Moment

We pick our olives by hand, exactly when their flavor and nutrients are at their peak. This gentle method protects fruit and ensures only the finest olives make it into our press.

Cold-Pressed Within Hours
Freshness is Everything

The olives are cold-pressed within hours of harvesting, at temperatures below 20°C and without added water. This preserves fruity notes, delicate aromas, and natural antioxidants.

Modern Mill. Strict Standards

Our boutique mill follows the highest European standards.
The oil is stored in stainless-steel tanks and bottled in dark glass to protect it from heat and light.
